One of those experiments has officially made its way from the test kitchen to the tasting bar: our brand‑new cacao jellies.

Inspired by the classic French pâte de fruit but rooted firmly in our island home, these jellies start with something we’ve loved for years but rarely spotlight on its own: fresh cacao juice. Pressed from the white, fragrant pulp that surrounds each cacao bean, the juice is naturally bright, tropical, and full of fruit‑forward character.
