This trio of 75% dark chocolate bars arrives wrapped in one of our custom eco-friendly jute gift bags and is a fascinating exploration in how different the flavors of chocolate can be based on where the cacao is grown.

Bar Descriptions:
As cacao farmers, we have the luxury of being in total control of the beans: from harvest, through fermentation and all the way through chocolate making. This two-ingredient dark from our Opaeula Ridge estate is a rare gift. The chocolate shows slightly more intense flavors than our signature "Kanahiku" dark bar, with notes of honey, blackberry and currant preceding a creamy finish.
We love to explore the concept of terroir and how different soils and climate influence Hawaii-grown cacao and the resulting chocolate. Made from meticulously farmed and fermented beans grown just outside of Hilo, three degrees closer to the equator than the North Shore, this bar has hints of brownie and raspberry, with more dark fruit notes than our Opaeula Ridge Estate 75% dark chocolate.
The Mapele Fields cacao orchard is meticulously farmed and the beans are masterfully fermented on the windward side of Oahu. Even if only a few miles as a crow flies from our estate, Ben Fieldʻs cacao carries addictive flavors of dark cherry, raspberry and a touch more tannin than its counterpoint grown at Opaeula Ridge. This bar is a perfect balance of power and elegance.
